Dave's Potato Soup

6 medium sized potatoes
2 cloves of garlic
1 carrot
1stalk of celery
1/2 medium onion
1/2 cup cooking oil
3 tablespoons real butter
3 tablespoons velveta cheese
3/4 cup flour
3 cups milk
3 cups chicken stock
1 teaspoon salt
1 or 2 teaspoons black pepper

1/4 inch dice the carrot and celery. Mince the garlic. Chop up the onion into 1/8 to 1/4 inch pieces. Cut the 6 medium potatos in to 3/4 inch pieces. In a 6 quart pot add 1/2 cup of oil and saute the carrot, celery, onion, and garlic. Add the salt and pepper. Melt in the real butter. Gradually add the flour to make a white rue with the vegetables in it. Pour in the chicken stock and bring to a simmer. Add the milk and bring to a simmer again then melt in the velveta cheese by cutting it into pieces. Lastly add the potatos and cook for 12 minutes after it comes back to a boil. While cooking add enough cold water to get the thickness you like.
