Meat Loaf
3 pounds ground beef
2 egg
10 saltine crackers
1/2 med bell pepper, chopped
1/2 med onion, chopped
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Louisiana hot sauce
3 tablespoons tomato sauce
 Crumble up crackers and mix all the ingredients (except the tomato sauce) in a large bowl thoroughly with your hands by squeezing the mixture through you fingers. In a pressure cooker add water but not so it touches the meat loaf. Place the loaf in the cooker using your hand and a spatula for support so it doesn't break apart. Spread the tomato sauce on top and cook for 20 minutes. Stop cooking and let out the steam being very careful to make sure all the pressure is gone before opening the lid. Add the same amount of water as before and cook 20 more minutes. If you have something that can raise that little platform in the bottom of the pressure cooker to about 1 to 1 1/4 inches ( I use sake cups) you can put in enough water to cook straight for 40 minutes.This makes a firm meat loaf that can be easily sliced and there's a lot less grease than when cooked in an oven.
