Bring rice, water, and salt to a boil then make flame very low and cook with lid on for 14 minutes. Remove rice from pot to a bowl to stop cooking. In a skillet, which will be big enough to hold the rice later, scramble the 2 eggs letting them stay together. Use a little of the oil for this. When eggs are cooked cut them up into 1/2 to 1 inch pieces, add the oil and add the meat and/or shrimp and stir fry until meat or shrimp are done. Add the vegetables and wilt them only starting with the Bok Choy. Then add the rice on top of all this and fold it together with a spatula. When evenly mixed pour the soy sauce around on top of the rice and stir again then remove from flame. You don't really fry the rice.
