Aunt Helen's Biscuit Pudding
3 Medium biscuits
1 cup evaporated milk
2 cups boiling water
1 cup sugar
1 teaspoon vanilla extract
Put biscuits, sugar,and boiling water in a loaf pan. When biscuits
finish swelling, beat with a fork til well mixed. Add
eggs and milk and beat the mixture again until it is evenly mixed. The pudding
mixture will then be about 1 inch from top of pan. Bake at 350 degrees F. for
45 minutes then put in the fridge to cool.
I liked this so much as a boy that Aunt Helen used to can a quart of it for my Christmas present and it's the only one I remember other than my first bike. I think you'll like it, too.
